Higonokami es la marca de cuchillos pequeños más famosa de Japón. Ahora Higonokami es famoso alrededor del mundo entero gracias a sus cuchillos para exteriores debido a que son ligeros, de diseño simple, duraderos, disponibles en varios colores y longitudes de hojas, hechos a base de acero Japonés de alta calidad y al mejor precio.

El Higonokami es un cuchillo tradicional Japonés el cual es un producto registrado y solamente manufacturado en la fábrica Nagao Kanekoma en la ciudad de Miki, prefectura Hyogo, Japón. Ciudad Miki tiene una larga historia con la elaboración de cuchillos y herramientas de carpintería.

La razón del porqué son llamados "Higonokami" — 「肥後守」 es porque tuvieron muchos clientes que compraron aquel cuchillo en la prefectura de Kumamoto, la cual está ubicada en la área de Higo — 「肥後」. Adicionalmente se añadió la letra "kami" — 「守」 que puede significar encanto, defensa, seguridad, director, trabajo, entre otros.

Después de que empezaron a elaborar los Higonokami, la mayoría de niños los usaban para tajar sus lápices, tallar bambú y actividades similares. En 2017, los cuchillos Higonokami todavía son manufacturados en la fábrica Nagao Kanekoma para artesanos de madera y coleccionistas. El herrero principal es Mitsuo Nagao quien es el artesano de la quinta generación de herreros.

Reglas para la Seguridad con Cuchillos
1. Siempre asegúrese de que nadie esté muy cerca de usted cuando use su cuchillo.
2. Siempre haga que sus cortes se alejen de usted mismo.
3. Cuando haga trabajos más finos, intente colocar su pulgar sobre la columna (la parte trasera) de la hoja.

* Cuchillos de chef, de cocina y plegables que sean de cualquier acero que no sea acero inoxidable necesitarán de un poco de cuidado para prevenir oxido en la superficie de la hoja. Aunque este mismo puede ser fácilmente removido si es que fuera a aparecer, recomendamos que usted lave a mano y seque con cuidado su cuchillo después de cada uso, no use un lavaplatos para lavarlo. Para almacenarlo por períodos extendidos, aplique un poco de aceite en la hoja.
