Gingami 3 is categorized to stainless steel for its 13-14.5% Chromium blending ratio. Although it’s a corrosion-resistant stainless steel, actual feel of cutting is closer to the high-end carbon steel, The edge is not slippy but significantly grabbing object fibers.

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

Holy shiznit this knife is sharp, and stays sharp. Fantastic handling, beautiful looks, and an edge that moves through meat (even raw) like butter. I bought this knife for trimming cuts after butchering, and can’t wait to give it a full run come hunting season. From its performance so far, it won’t disappoint.
The sales lady even artfully sold me the matching Nakiri, which I love. No regrets, and money well spent on the trip of a lifetime. The staff were incredibly friendly, and spoke perfect English which was helpful as I know about five Japanese words.
