本品はシリーズ中一番細かくきれいに研ぐことができる仕上げ砥石。

【使用方法】
・水をかけるだけで研いでください。
・砥石が動かないように固定し安定した場所でご使用下さい。
・動かないように固定するものがない場合はT濡れタオルを砥石の下に敷いてご使用下さい。
・研いでる時に出る研ぎ汁や研ぎかすは研磨剤(砥粒)が混入していますので流さず、洗いおとさずに順次水を補給しながら研いでご使用下さい。

Japanese whetstones (also called water stones) – both natural and synthetic – are known for their quick-working qualities, not only for Japanese blades, but also for their Western equivalents. The small particles that do the cutting are loosely bound together in the stone, and so during sharpening with the whetstone, the surface particles are quickly washed out, allowing new, sharp, particles to start working on the blade. These whetstones must be lubricated only with water! Never use oil or other lubricants!Whetstones come in a range of grits:#80 to #500 grit is typically used to repair knives with chipped edges.#600 to #2000 grit are used to sharpen dull knives.#3000 to #6000 grit are finishing stones and are used to refine your knife edge.#8000~ grit are Super finishing stone.If you are using your knife to cut meat it is best to stop at between #4000 and #6000 grit as you can bend your knife edge on the muscle.

HANDMADE FORGING

With the traditional forging process, the molecules of the iron material are finely tuned, leading to the completion of a "living kitchen knife" that breathes.

DURABILITY

The process of heating and forging each material for mold making is repeated three or four times to quickly shape the blade and create durability before the carbon is released from the steel causing it to lose its original strength.

SHARPNESS

The blade is the most important factor in achieving the best possible sharpness. It is polished in our own blade factory to produce uncompromising sharpness.

HANDLE

The highest priority is placed on sturdiness, a sense of luxury, and a shape that is easy to grip and does not cause fatigue even after long hours of use.

the stone feels pretty good to sharpen on but if you want to buy the stone for Kasumi polishing then don't unless, doesn't give a nice Kasumi polish but does an okay job at polishing hard steel

Smooth and natural

One of the best synthetic stones i've used to date for both stainless and carbon steels. Very smooth with good feedback. Feels almost like a natural stone, leaving a fine mirrored and yet toothy edge. Gives good contrast of Hagane and Jigane depending on applied pressure and controlling the slurry build up.
